Loaded Baked Potato Pizza by Mandy Koury1 pkg. refrigerated pizza dough
4-5 medium redskin potatoes
1 Tbsp. Extra virgin olive oil
1 tsp. kosher salt
½ tsp. ground cayenne pepper
½ tsp. garlic powder
1 lb. bacon; cooked and crumbled
3 cups shredded mozzarella cheese
1 cup sour cream- add salt, cayenne pepper, garlic powder to taste
Sliced green onions
Preheat oven to 400 degrees
Lightly spray a baking sheet with cooking spray
Roll out dough on floured surface and fit to baking sheet; set aside
Slice potatoes ½ inch thick and coat with olive oil, salt, cayenne and garlic powder; bake for 12- 15 minutes or until cooked through; remove from oven and set aside
Bake bacon in oven on a baking sheet until crispy; crumble and set aside
To assemble: layer pizza dough with 2 cups of cheese, top with potatoes and ¾ of the bacon, add remaining cheese on top and bake for 25- 30 minutes in the middle of the oven, or until the cheese is bubbly and the crust is golden brown
Drizzle sour cream over cut slices of pizza and top with remaining bacon and green onions
